Meatloaf Bites


This is one of those recipes that can either be eaten that night or frozen for use for later.  I like these as either a meal on the go or a quick snack.


Put about 2 lbs of hamburger in a big bowl and mix in whatever you use for meatloaf.
For us it's a little bit of soy sauce, onion, salt and some whistishire sauce, an egg and either oatmeal or crackers or if you have it you can even use some bread crumbs.  (This bulks it up a bit and helps everything to form together.)


Spray your muffin pan with non- stick cooking spray and form into balls.  Add 1 bit of raw bacon and 1 dill pickle to the top of each ball.

Bake for about 45 or so minutes in a 350f degree oven.

  1. I like the pickle addition. I never thought of meatballs in a muffin tray, yet it's the second time I've seen a story on one this week. Yum!
